Marinated Cantaloupe Melon with Sweet Ricotta Cheese

A delicious combination of melon with ricotta cheese. Simple to make and a beautiful dish, bringing sunshine to your table.



  • 1 cantaloupe melon

  • 400gr Sardinian sheep ricotta cheese

  • 150gr caster sugar

  • 2 oranges

  • 40ml balsamic vinegar

  • Mint

  1. Slice the melon removing pits and skin

  2. Marinate the melon for at least half an hour with balsamic vinegar and mint

  3. In the meantime, in a bowl whisk the ricotta with sugar and the juice of an orange

  4. Place the melon slices on a serving plate, spoon the ricotta mixture over the slices and around the plate and garnish with the zest of one orange and the mint leaves.
